Makes: 15 cookies
Time: 15 minutes
1 cup of almond flour
3 tablespoons of ghee
1 tablespoon of organic butter
3 tablespoons of powdered sugar
½ tsp vanilla extract
5 - 6 cardamom pods
¼ cup pistachios, finely chopped
Preheat your oven to 350F.
Pour the almond flour into a mixing bowl.
Add the powdered sugar, ghee, butter, and vanilla extract to the flour, then mix well. Set aside the mixture.
Take the seeds out of the cardamom pods and crush them until you have a fine powder.
Add the cardamom powder to the flour mixture.
Knead until it looks like cookie dough.
Line a cookie sheet with parchment paper.
Place 1 inch wide balls of dough about 2 inches apart on the sheet.
Flatten the balls until they are approximate ¼” thick.
Sprinkle some chopped pistachios to the top of each cookie.
Put the cookie sheet in, and bake for 8 to 10 Minutes
Take them out of the oven let them rest on a cookie sheet. These cookies taste best when cooled down for 5 - 7 minutes.
